Sweet Southern Corn Bread

What You Need

1/2 cup + 1 tablespoon butter
1 cup golden brown sugar, not packed
2 eggs
2 cups flour
6 tablespoon cornmeal
3 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup milk

What To Do

  1. Preheat oven to 350 F and grease two 4 x 8-inch loaf pans.
  2. Cream 1/2 cup of the butter and brown sugar together until fluffy.
  3. Blend in the eggs, one at a time.
  4. Combine the dry ingredients together in a bowl.
  5. A little bit at a time, stir the dry ingredients into the wet ingredients until everything is well blended.
  6. Add the milk and mix well.
  7. Pour the batter into the greased loaf pans (the batter will fill half of each loaf pan) or use a lined muffin tin.
  8. Bake for approximately 30 to 35 minutes, or until a toothpick inserted into the middle of a loaf comes out clean.
  9. Spread remaining tablespoon of butter onto the top of the cornbread while still warm, slice and serve.

Sweet Advice

  • If you want to make one large loaf, the batter should fill no higher than three-quarters of a loaf pan, and additional baking time will be required.
  • For some different flavours, add 1/4 to 1/2 cup of cooked, chopped bacon, or chopped jalapeno peppers.
  • If the batter is getting too sticky while adding the dry ingredients, feel free to start adding in the milk and alternate back and forth between dry and wet ingredients until everything is smoothly blended.
  • Serving idea: Add some flare to your dinner table by baking your cornbread in one large cast iron skillet so everyone can share.
